Pockets &
Calzones
My kids love to make these. You can put almost
anything into a pocket or calzone. They are fun to make
and a big crowd pleaser. When you say anything about
baking your own bread a lot of people panic. It is so
simple and cheap to do. It just takes a little bit of time
for the bread to rise. If you do not like the work of
kneading the dough have the kids do it. They will love it.
It is like playing with playdough. My kids do most of the
work when we make these. They will knead the dough,
roll out the circles, and put in the filling. I just have to
do the rest and supervise. It is a fun family project that
ends with a very tasty meal together.



Crust

What you will need

1 1/4 c. warm water
Vegetable Oil Or Olive Oil
3 1/2 to 4 c. sifted flour
Baking Sheet
1 tsp. salt
2 packages dry yeasts

Depending on what kind of filling I am doing I
sometimes add garlic power and oregano to the dough.


1. Sprinkle the yeast into a medium bowl containing 1 1/4 cup
warm water and stir until yeast dissolves. Then mix in the salt.

2. Add 2 cups sifted flour and stir until blended. If I am adding
garlic and oregano I add it after this step.

3. Add another 1 1/2 to 2 cups flour and blend until too stiff
to stir with a spoon.

4. Turn the dough out onto a floured surface and knead it for
10 to 15 minutes until dough is smooth and elastic. (or make
the kids do it)

5. Place the dough in another bowl greased with a small
amount of oil. Turn the dough once so that the top is oiled.

6. Cover the bowl with plastic wrap and put it in a warm place
for about 45 minutes or until the dough rises to about double
its original size.


See this is not that hard so far!!!


Now pull off balls of dough and roll out onto a floured
surface. Now you can add your fillings and close it up.
You can fold them in half and pinch them on the side like
a regular calzone or whatever is easiest for you.

My kids find it easier to roll them up like a burrito. They
first fold in three sides of the circle. Then they dip their
fingers in a bowl of water to wet the last side before
they roll it closed. It works better to use the water and
then gently stretch the last side so you can roll more
dough around it. Then there is less chance of the sauce
getting out.

Place them on a baking sheet and poke two little holes
in the top so steam can escape. Bake at 425 degrees
for about 15 minutes or until golden brown.
Let cool for 5 minutes before you try to cut or serve
them. They will have burning hot lava inside of them.


Fillings

You can fill them with just about anything. You can even let
each person decide what they want to fill theirs with. Just
have then use a toothpick to poke their name into theirs with
dotted lines. That way you can tell them apart.


Meatball   (A favorite in my house)
Frozen meatballs work great just be sure that they are
defrosted and are the fully cooked kind. We add 4 meatballs in
a line and then top with a little pizza or spaghetti sauce and
shredded mozzarella cheese.

Pizza
Any pizza toppings you like, sauce, and mozzarella cheese.

Spinach & Cheese
Frozen spinach, defrosted and drained, onion, garlic, ricotta
cheese, and feta cheese.

You can add just about any meat, cheese, vegetable, and
sauce. Have fun and see what new ones you can come up with.
