Add in some meat or vegetables to make it a main dish. I do this to use up leftovers like ham and turkey after holidays. This is so simple to make and much better than that boxed stuff. This recipe will fill a 9 x 13 casserole pan so you can have enough for a main dish.
You will need
12 medium boiling or baking potatoes (4 lb) 1/2 cup butter or margarine 1 medium onion, chopped (1/2 cup) 2 tablespoons all-purpose flour 2 teaspoon salt 1/2 teaspoon pepper 4 cups milk 4 cups shredded natural sharp Cheddar cheese (16oz)
Seasonings - You can try seasonings if you would like; garlic, oregano, rosemary. You can also add toppings like bread crumbs and paprika.
Instructions
1. Wash and cut potatoes into slices. You can peel them but I like the skins and it is easier to not peel them.
2. Melt butter in 2-quart saucepan over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly.
3. Stir in milk and 3 cups of the cheese. Heat to boiling, stirring constantly. Boil and stir 1 minute.
4. Spread potatoes in ungreased pan. Pour cheese sauce over potatoes.
5. Bake uncovered 1 hour. Sprinkle remaining cheese on top and bake another 15 to 20 minutes or until the top gets brown. If you have bread crumbs or paprika you can add them to the top with the cheese as well. They give it an added flavor and crisp topping.
