Potato Salad
When looking for fun things your kids can make with you
potato salad is right up towards the top. They can not boil the
potatoes or eggs obviously, but there are definitely things
they can do. My kids love helping peel the potatoes after they
boil because the skin comes off so easily. The older one peels
the eggs and the youngest gets out a plastic knife and chops
up the potatoes and eggs.

The potatoes and eggs are soft so no worrying about injuries
and she gets to practice cutting and feel like a big girl. Who
cares what the pieces look like it is potato salad after all not a
gourmet meal. In the meantime I cut up the onions and celery.
So many people just buy potato salad at the store but it is
worth it to make your own.

You can make it however you want and have fun with your
kids. Potato salad is touch and go when you buy it at the
store. You get one and wish it had more eggs or another one
that does not have enough mustard. When you make your
own you can make it just how you want it. There is no wrong
way.



What you will need

14 russet potatoes (you can also use red skin potatoes if you
want and leave the peals on, just make sure you use more potatoes)

4 hard boiled eggs (We like more so we use 6 eggs)

onions (1/2 a small onion diced or split up between some white
onions and some green onions.)

3 stalks celery diced

2  1/2 cups mayonnaise

1 Tablespoon yellow mustard
(we add an extra tablespoon)

1/2 teaspoon white or black pepper

1 teaspoon salt


Before you begin you need to boil the eggs and potatoes. The
eggs can be boiled ahead and refrigerated.  It will be easier to
peel them. I like to bring the eggs to a boil and then turn off
the burner after one minute. Cover the pot and let sit for 20
minutes. This makes nice eggs that do not turn green. Boil the
potatoes until they are fork tender. Drain pot and fill with cold
water to cool them. When the potatoes are cooled you are
ready to go. If you are using russet potatoes this is when you
peel them.

Chop everything up and mix it in a bowl. That is it. Very easy
and the kids get to help. If you want a fresh and crisp texture
to the onions and celery then you can just chill it an hour and
eat right away. If you like the flavors to get a chance to mix
together then make it in advance. Often the second day it
tastes the best. This is a great easy do ahead side dish. All you
have to do is pull it out of the fridge and it is ready.



Variations

Remember that you can make it how ever you like it so have
fun with it. Do you like more mustard or eggs? Do you like
more onions? There is no wrong way to make it.

Often we add in bacon bits, but it HAS to be "real bacon"
bacon bits not the weird stuff.

Some people like to add pickle relish, chopped up dill pickles,
or bell peppers. I have not tried these because my kids would
run the other way.



Deviled Egg Potato Salad

This may be my favorite way of making potato salad. I can not
make it all the time though because if it is for the grandparents
I have to leave out the spices.

For this twist you just have to mix 1 Tablespoon of paprika
and 2 teaspoons of Tabasco sauce to the mayo before you mix
it into the potato salad. Just enough spice.
