Egg Strata

This is a do ahead meal that is great for the family and
even better when you have to make a big breakfast or
brunch for a lot of people. You put it together the day
before and just have to put it in the oven in the morning.
You will find this is more of a guideline than a recipe.
This can be customised to whatever your family likes.
You will need
Bread
You can use white or wheat depending on your taste.
You can also cut the crust off if you want.
Egg Mixture
12 eggs
4 cups milk
Seasoning - you can use anything you want...
(salt, pepper, seasoned salt, mustard, Tabasco)
Fillings
Use anything your family might like in an omelette.
(Bacon, ham, sausage, cheese, onions, bell peppers,
hot peppers, mushrooms, spinach)
Instructions
1. Lightly butter or spray a 9 X 13 inch casserole dish.
2. Cut bread into cubes making 6 or 7 cups. Then
spread the cubes evenly in the dish.
3. Spread your fillings evenly over the bread cubes.
4. Pour the egg mixture over the top.
5. Cover with aluminum foil and refrigerate over night
or at least 4 hours. (you really should not skip this step
it allows the bread to soak up the eggs)
6. Pull the dish out of the refrigerator 30 minutes
before you want to bake it so it can warm up some
before you put it in the oven.
7. Bake at 325 degrees for about an hour. You can add
more cheese to the top close to the end if you like more.
Notes from my family
My kids love making this dish because it allows them to
choose what they would like to add. It is also easy for
kids to help out. We try to let the kids practice cutting
whenever there is something soft enough to be cut
with a plastic knife or butter knife. My kids love this one
because they can cut the bread into cubes.
I have found this recipe to be a great addition to
Christmas and other holiday breakfasts. There are so
many other things going on that I do not want to be
trapped in the kitchen and miss all the fun. With this
recipe I can throw it in the oven and go back to
enjoying the fun moments that create memories.
